Saturday Night Fondue Party

This weekend was busy and lots of fun. On Sunday my brother Blake, his wife Karen and my friend Vanessa went to the hockey game. It was a pretty good game and we even got to see a shoot out!

Before the game Vanessa and I hosted Blake and Karen at Vanessa’s house and we served fondue. We had two kinds – Gruyere and truffle fondue and Applewood smoked cheddar fondue. They were both very good and it was fun to see what fondue paired best with what veggie. Everyone like the apples with the Applewood smoked cheddar.

Applewood Smoked Cheddar Fondue

• 1 lb Applewood smoked cheddar
• 1 tbsp corn starch
• 1 cup hard apple cider – Strongbow
• 1 clove garlic minced
• ½ tsp freshly ground nutmeg
• ½ tsp pepper

Shred cheddar toss with corn starch.
Bring the cider to a boil and add garlic. Add cheese and melt.
Stir in the nutmeg and pepper. Cook for a bit to thicken sauce.
Transfer to fondue pot. Serve with diced bread cubes, broccoli, roasted new potatoes, asparagus, mushrooms, cauliflower and apples.
