Cajun Chicken Dinner

The meal plan fell apart this week, I had a couple nights where I wasn’t home for dinner, so we missed two meals.

 

Tonight’s dinner turned our really delicious even though it did not demand much effort.

On the Menu:

  • Cajun Chicken
  • Pineapple salsa
  • Cilantro cream &
  • Asian salad

 

The Asian salad was from Costco – it was good. I would buy it again.

I made the chicken using the breast meat and just covering it with Clubhouse Cajun Seasoning mix. I grilled it to start (on my grill pan) then finished it in the oven.

Cilantro Cream

  • 1 cup sour cream
  • Large handful for cilantro – minced
  • Zest of one lime
  • Juice of one lime
  • Salt

 

Mix everything together add more or less of anything to your liking.

Pineapple Salsa

  • 1 med pineapple
  • 1 sweet red pepper
  • 1 small red onion
  • ½ to 1 jalapeno
  • Handful of cilantro
  • Juice of one lime

 

Chop pineapple, red pepper, onion and jalapeno into a uniform dice. Mince cilantro and juice the lime. Mix everything together. Let sit for 30 for the flavours to meld together.
