Hamburger Stew

This is a good hearty weeknight dinner that is super easy to prepare. It is good as leftovers and all-round pretty tasty.

It was a family staple in the Nadeau house growing up and it is just as good as I remember it.

And it is pretty healthy!

Hamburger – Vegetable Stew

  • 1 ½ lb hamburger
  • 3 cups water
  • 1 cup cubed carrots
  • 1 cup sliced celery
  • 1 cup cubed potatoes
  • 2 medium onions
  • 2 tsp salt
  • 1 tsp beef bullion
  • ¼ – ½ tsp pepper
  • 1 bay leaf
  • 1/8 tsp basil leaves
  • 1 28 oz can tomatoes
  • 2/3 cup barley
  • Sliced turnips
  • 1 can cream of mushroom soup

Brown meat on Dutch-oven until cooked, drain.  Stir in remaining ingredients, break up tomatoes with fork.  Heat to boiling, reduce heat.  Cover and simmer until vegetables are tender, about 20 minutes.

Yield: 6 servings – 1 ½ cups each.
